Legend has it that Aphrodite came down from the heavens on a scallop’s shell. Since then scallops have been considered aphrodisiacs by association. Even modern science has proven that there is some truth to the romantic hype.

Aphrodisiac or not, I love these little oxymorons. So easy to prepare that you can make it on a weekday, yet special enough to serve to guests or on a very special occasion (especially since they are prepare ahead of time friendly).

In Italy, capesante gratinate are traditionally served on Christmas eve. They are cooked au gratin in their shells. I always thought this was kind of funny because in the States you would barely even know they came from a shell.

Here is my recipe with or without the shell.

Ingredients
6 sea scallops, cleaned with or without their shells
5 tbsp (40g) bread crumbs
1 tbsp (8g) Parmesan cheese
1.5 tbsp (20g) olive oil
1 tsp (5g) chopped Italian parsley
1 tsp (2g) white wine
1 tbsp (5g) milk (only if making it without their shells)
salt and pepper (white pepper works nicely here)

Serves: 2. Total time: 20 minutes


Directions  – with shell
1. Preheat grill to 450F (230C).
2. Mix breadcrumbs, cheese, parsley, olive oil, wine, and a bit of salt in a bowl.
3. Salt and pepper both sides of scallop. Replace in shell.
4. Add about 1 tbsp of mixture on top of ea. scallop.
5. Bake scallops for about 7-10 minutes under grill until bread crumbs start to turn light brown.

Directionswithout shell
1. Preheat grill to 450F (230C). Add a bit of olive oil onto a baking disk
2. Mix breadcrumbs, cheese, parsley, olive oil, wine, and a bit of salt in a bowl.
3. Dip each scallop in milk then add salt and pepper.
4. Use hands to mold breadcrumb mixture on sides and tops of scallops (not on bottoms, the bread crumbs on bottom will just get mussy). Place scallops onto baking dish.
5. Bake sea scallops for about 7-10 minutes under grill until bread crumbs start to turn brown.
