How to Make Whipped Coconut Cream – Come si prepara frosting al cocco (vegan)

Making whipped coconut cream-frosting is actually really easy if you can find actual “coconut cream”. But from experience I know that coconut cream isn’t always easy to find. So I decided to write a blog post about how to make coconut cream from coconut milk.
Fare il frosting con la crema di cocco (coconut cream) é veramente semplice sempre se riesci a trovarla. Per la mia esperienza non e’ così, quindi ho deciso di fare un post dedicato a come si prepara utilizzando il latte di cocco.

So first things first what exactly is coconut milk? And what’s coconut cream?
Faccio una premessa e vi spiego cos’è la crema di cocco (coconut cream), il latte di cocco (coconut milk), l’acqua di cocco (coconut water), considerando che non sono ingredienti di uso comune in Italia.

Coconut milk is made from grating and soaking or simmering the hard flesh of a mature coconut. It is made one part grated coconut to one part water. It more or less has the consistency of whole milk.
L’acqua di cocco e’ il liquido trasparente che si trova dentro un cocco giovane, invece sia la crema che il latte di cocco si ottengono grattugiando la polpa di un cocco maturo (quello comune con la buccia marrone).

Coconut cream is made from soaking or simmering 4 parts grated coconut to one part water. Since it’s made with less water it has a higher concentration of the natural oils from the coconut. It’s like what heavy whipping cream is to milk. (see it’s very appropriately named). But it’s thicker than heavy cream almost the consistency of mashed potatoes.
La differenza tra le due é più o meno quanto acqua va aggiunto al cocco grattugiato. Il latte é più liquida, mentre la crema molto più densa.

Creamed coconut is the concentrated form of coconut cream. On relatively cool days it tends to be a rock hard solid. It makes a thick whipped coconut frosting.
Giusto per complicare ancora di più le cose esiste anche creamed coconut, che e’ la versione ancora più densa della crema di cocco.

FYI coconut cream (or even creamed coconut) should not be confused with cream of coconut which is the sweetened stuff. It’s the condensed milk to coconut milk used to make delicious things like pina coladas.
Vi consiglio di fare attenzione a quello che state comprando. Esistono creme e latte di cocco dolcificati che non sono adatte a tutte le preparazioni, ma per dolci e bevande stupende come la pina colada.

If you’re a lucky someone a store near you will sell coconut cream (like Trader Joes) and you won’t have to figure out what I’m about to explain next.
Trader Joe’s negli Stati Uniti vende il coconut cream ma io non ho ancora visto la crema di cocco in Italia. Invece ho trovato il “creamed coconut” in un negozio che vende prodotti alimentari indiani.

Unfortunately lots of places don’t sell coconut cream to you have to “make it” from coconut milk. And well fortunately making coconut cream is really easy. Take a can of coconut milk stick it in the fridge overnight (about 8 hours). During this time the “cream” will separate from the “water” and you’re all done… YES, but not exactly.
Se non lo potete trovare la crema di cocco ne il “creamed coconut” bisognerebbe crearlo. Fortunatamente il procedimento e molto semplice. Basta mettere la lattina di latte di cocco nel frigo per una notte. Durante questo tempo di separerà la parte più grassa e solida da quella più liquida.

If that was all that was involved I would not have bothered to write this post. THE HARD PART IS FINDING A COCONUT MILK THAT WILL SEPARATE!!! For example the brands below DON’T work.
Ma se ci volevo solo quello non avrei scritto questo post. Il problema e trovare il latte di cocco che separa. Infatti il latte di cocco nella foto sotto non si separano.

I think it’s because lots of coconut milk on the market these days have stabilizers. The non organic ones have stuff with the word “E” in it. I’ve read that some of the organic brands have guar gum which from what I’ve read acts as a stabilizer and those don’t work either.
Tanti marchi che hanno stabilizzanti e altri ingredienti artificiali non permettono questo processo.

But the brand I found here in Italy (pictured below) has guam guar and it works just fine.
In Italia ho trovato questo marchio del Altro Mercato che contiene il gomma di guar (un stabilizzante) ma funziona lo stesso.

So I’m going to say the best indicator for whether or not your coconut milk will separate is to shake the can. If you don’t hear that sound of water swooshing then you’ve found the ONE.
Perciò per capire se il tuo latte di cocco si separerà prendi la lattina e agitala. Se non senti il rumore dell’acqua che si muove vuole dire che hai trovato quello giusto, anche perché a temperatura ambiente l’olio di cocco e solido.

Okay that’s it. Now you know just about everything you need to know about coconut milk products and how to make whipped coconut cream frosting. Here’s a picture of what coconut cream looks like once whipped up in a bowl.
Adesso sapete quasi tutto sui vari prodotti derivati del cocco e come prepare il frosting, come quella nella foto sotto.

  1. With an electric hand mixer whip up coconut cream for a few minutes until it forms peaks. Add vanilla and shifted powdered sugar and whip to combine.
Recipe Notes

If you don't have coconut cream (or creamed coconut) place a can of stabilizer free full fat coconut milk in refrigerator overnight. Once chilled scoop out thickened coconut cream and discard (or freeze for another use) separated water.

  1. Mettete la crema di cocco in una ciotola media e montatolo per circa 5 minuti. Aggiungete la vaniglia e lo zucchero a velo (se lo state utilizzando) e montate ancora per qualche minuto l'impasto.
